I added the brown sugar, and honestly, you could add more squash and less parsnip, but that's just the parsnip hater in me talking. Will be having this tonight for dinner, with some hot fresh Johnny Cake!

thanks Cathy - your most anal blog poster here. I would love to know the fonts you use for your recipies so I can see if I have them or buy them. I know you can relate with wanting all the recipies to be printed out in the same font!! LOL.
So glad to know your mom is doing well - I missed that she was having a procedure. Here is to a speedy recovery!

glad to hear your mom is good. its gonna be 80 here today so I will temporarily pass on the soup! lol!! and did you see the ad for the Scrapbooker's Almanac? I was squinting and couldn't read the journaling....I could make out about half the musical groups in their itty bitty pictures. but anyone that remembers/loves Scritti Politti has to be good, right??

Thank you very belatedly for the recipe book. I LOVE mine. And it's a project that I actually finished! The soup looks like something we will like, so we'll give it a try.
How many of your photos do you print out during the year? I find that I rarely print out anything anymore.

sorry the soup sucked... I was so in the mood for stew or something that had to cook all day yesterday as we had our first snow here in Denver. This is a yummy white chili:
Saute 1 sm onion, 2 stalks celery and 1 clove garlic in 2 T olive oil. Add
1 lb chopped chicken or turkey, 2 cans cannelini beans, 1 can green chiles, 4-5 c chicken stock, 1/2 tsp cumin and cayenne pepper to taste. Simmer and top w/ shredded jack cheese if you have the points left ;)

I made a roasted butternut squash soup the other week, which should have been so good but it just wasn't. Next time I'll just eat the roasted squash on it's own! And I'm not brave enough to go anywhere near a parsnip.

Parsnips are a root veg, but are *not* to be cooked like carrot... ie 'al dente'. The parsnip is an overlooked and underestimated vegetable (bear with me) and need to be cooked until they are soft, soft, soft. I'm English so maybe I'm biased. Honestly, it is awesome in the RIGHT recipe. In my mind, sugar and parsnips are not an agreeable combination, yuk. And for crying out loud, do not buy the waxed type... never saw that until I came to the US, urgh, who in the hell pokes these lovely vegetables into wax and for why? However, well cooked parsnips with a lovely glob of some homemade basil pesto and a little shredded aged parmesan cheese and a touch of freshly ground black pepper... now you're talking!
